We booked a trip to Italy for August and recently found out we will be there on Aug 15 Assumption Day. We are trying to decide if we should spend the day in Rome or Florence. I’ve heard Rome has ceremonies and dancing in the squares this day - are there celebrations in Florence too? Will restaurants be open?

I am not sure what happens in Rome on August 15th, but in Florence there are no special ceremonies or events. It is a religious holiday, so masses for sure, but generally nowadays most people spend it at the beach ;-).

Yes, restaurants will be open.
