Tuscany in one day in January

Hello, we are a family of 5 from Australia (2 adults and three children).
We are staying in Florence for 4 nights during a three week stay in Italy.
I am keen to do a day trip to see a little of Tuscany during our stay in Florence.
I am interested in seeing San Gimignano, Siena, Pisa and Lucca.
We want to climb the Leaning Tower of Pisa but are not really that keen to look in museums, churches etc (we will be doing plenty of that in London, Paris, Venice, Florence and Rome). We are more interested in seeing the countryside and seeing the local life.
It will be winter so the day light will be short.
I am feeling brave and am thinking about hiring a car to get around easier.
Is that a good idea?
Are we trying to see too much in one day?
Which area would you leave out if the itinerary will not fit into one day?

San Gimignano, Siena, Pisa and Lucca in one day is definitely too much.

If you really want to do the tower - then I suggest you visit just Lucca and Pisa (be sure to get your tickets in advance for the tower!)

Lucca is a great little town to get a feel of the town life, it is small and walkable and you don't need to go in any of the churches or museums to get a feel of the beauty of Tuscany.

These two towns are well connected with the trains so you could even avoid renting a car and getting around with public transport.
