Guides around Follonica

My wife and I will be staying in the hills east of Follonica in October 2017. Can you please recommend the following
1. A driver who can take us around to important historical sites and act as a tour guide
2. Someone who can take us bird watching for a day
3. Someone who can take us on a nature hike in the hills
4. Someone to take us on a wine, cheese and olive oil tasting tour

Any help would be appreciated.
