Had to Cancel Trip So Need Help

We had to cancel our trip to Italy because of the virus so are having to reschedule. We were thinking of Florence in the Spring (when the flowers are in bloom). When is the best time to go? Not sure the right amount of days to stay as we are also going to Rome for 3-4 days. We have a few things we need help with

1. Would it be better to rent a Vespa or a car to do some wine touring? What would be some suggestions of the top wineries to visit. I think it would be something different to rent a Vespa for us (I'm bringing my granddaughter).
2. We would like to take a pasta making class. Any suggestions on where we could do that?
3. I thought it would be fun to take the train to Venice for the day so we could see some of the countryside and spend the day there. Is that possible?
4. Besides seeing Pisa, what other places would be musts to see.
5. What would be the most economical way to see Rome and Tuscany (fly into Rome then train to Tuscany and fly out of Florence)?
