Between Pisa and Florence, I would recommend San Miniato, Vinci, Montecatini Alto and Pistoia. Most are definitely not on most people's itineraries, but as it is also the middle of August, many Italians are on vacation and go to the beach and so even larger towns are semi-deserted (in the residential areas, of course). Lucca, as Uomo Grasso suggested, should also be quite nice during that time.

Default Agriturism between Pisa and Florence

    Buongiorno,

I was just out to visit this Residence Santa Maria, and they are very suited for a family with one child

This agritourism is a family run organization, which is very friendly and has great views.

    Buon Viaggio

Keep in mind that most agriturismo during August (high season) will only rent for a whole week, from Saturday to Saturday. Your dates don't really mash up, so you might also be told there is no availability based on your dates.

Family friendly agriturismos that also rent by the day:
    - http://www.tuscanyaccommodation.com/...ontalbino.html (they have apartments rented by the week but also rooms rented by the day)
    - http://www.tuscanyaccommodation.com/...drifoglio.html
    - http://www.tuscanyaccommodation.com/...-libbiano.html
    - http://www.tuscanyaccommodation.com/...a-meliana.html
    - http://www.tuscanyaccommodation.com/...a-vacanze.html (near Empoli, so between Pisa and Florence)
    - http://www.tuscanyaccommodation.com/villa-alba.html (right outside San Gimignano so very central)

All will generally provide a crib for your baby, just ask them when you contact them!
