Pisa to Saturnia and Saturnia to Florence

I will be in Pisa early January and will visit Saturnia before returning to Florence to drop my rental Car.

With my return trip I think I have my route planned out already.

I plan to drive from Saturnia through Mantalcino and then from Siena take route 222 through Chianti.
By doing this I think I will have a very scenic drive. I however think that I will only be able to work in one stop for lunch. Maybe somewhere in Chianti at a winery? Any sugestions? And maybe a quick stop in Montalcino so that I can be in Florence around 2PM.

Regarding my trip from Pisa to Saturnia I am however still in to minds.

DO I take the coastal route to Grosetto and from there to Saturnia? If so what stops can you suggest along the way and is this a scenic route?

Or do I go more inland and work in a stop in San Gimignano and maybe Sienna? My thought is to do lunch in San Gimignano in this case. I would leave Pisa at around 10 am and hope to be in Saturnia by 5pm.

Any suggestions to help me finalize this route would be much appreciated.

Thank you in advance
