Tuscany in September 2018

We are planning a trip in Tuscany in September 2018 but don't know where to start!! We want to stay in a farmhouse with lots to see and do (visit the chianti regions, olive gardens and eating with the locals) can you please help me in organizing our trip. Also once there we are NOT planning on rent a car.
