Staying at an apartment during your stay in Tuscany gives you the opportunity to have a bit more freedom in terms of your daily schedule and movements than a hotel usually affords. You can come and go when you need to, and if you feel like it, save a bit of money by purchasing some local, fresh products and cooking yourself if you are tired from a whole day out and want to relax at "home".
An apartment vacation rental also allows you to save if you will be staying in one place for more than a few days (the cost per day is usually lower than hotels), and if you stay in an apartment in the countryside, you could use that as a base from which you can visit most of Tuscany without having to change hotels every day. Keep in mind that many apartments are located within a larger farmhouse or villa that has been divided up. Depending on the property, you generally have your own keys and complete freedom but might not have the whole property to yourself.
